This was Hunter's second year doing cards at school and this year we made a huge mess making sugar cookies from scratch, which I have never done by myself. Sugar cookies have never been my favorite because I have always thought they are too dry or have no taste. If I'm going to eat a cookie I want it to be good, I've gotten a little snobby about cookies the older I get. So I searched and found a recipe that contained eggs so I thought they might be a little cake like. They were fabulous! I found that they were really yummy coming out of the oven when they were warm. They were devoured by my family and I sent some up to the neighbors so we didn't eat them all. The boys and I also made lots of crafts that day and I spent a little while before dinner scraping the glued pieces of paper off the table. We had a blast and it is how I want to spend the days leading up to Valentines from here on out.
Now as for Valentines Day, it was our neighbors birthday so we asked her what she wanted and she requested a red velvet cake. I have never made or tasted a red velvet cake and figured I would do it all in one shot. I found a recipe and got to work mixing and baking and making a huge mess. Once the mess was cleaned up and the cakes were baked I decided to start on the frosting. The frosting for this cake is now my new favorite, but it did require a little cooking. While I was cooking one part of the frosting the worst thing happened, the power went out. I hurried to finish cooking it and headed outside to start up the generator. The boys and I then finished the frosting and frosted the cake, made sandwiches for dinner and waited for everyone to get to our house.
In my mind this will be a Valentines Day to remember. It was a night spent with my wonderful family that I love so much and that loves me back. Our power was out for 9 hours but we survived and can add it to the memory books. Oh and the cake turned out beautifully and was good! But chocolate is still my favorite!!!
